Jeremy West

Procurement Consultant

Jeremy West, MS, SNS is the Founder and Principal Consultant of Huddle, LLC and serves as the Procurement Consultant for Rockies Purchasing Services. 

Jeremy began his career in foodservice in 1999 after completing the Culinary Arts program at Pikes Peak Community College.  After spending several years in the healthcare industry seeing, as he puts it, “the other end of life”, Jeremy was compelled to effect nutritional change in our youngest generations and made the leap into school food service. 

Jeremy served as an Assistant Director for Colorado Springs School District 11, as the Director of Nutrition Services for Greeley-Evans School District 6, and as the Director of Operations for Food & Nutrition Services at Jeffco Public Schools in Golden, Colorado. 

During his time in school nutrition, Jeremy and his team garnered national attention from the New York Times, ABC’s Nightline news program and were recognized as the 2016 K-12 Innovators of the year by Food Management Magazine for their efforts to prepare foods from fresh, local ingredients. 

Jeremy is a Past President of both the Colorado School Nutrition Association (CSNA) and the Colorado Association of Nutrition & Foodservice Professionals (ANFP-Colorado).

 Monica Deines-Henderson

Chairman

Monica Deines-Henderson graduated from Western State College in Gunnison Colorado and then obtained her Masters of Business Administration from National University in San Diego CA. 

She has been working in the school nutrition field since 1998 and has been the Director in El Paso County School District 49 for the past 19 years. 

Monica was one of the founding members of Rockies Purchasing System and has served on the board for the past  17 years.

Mindi Wolf

Treasurer

Mindi Wolf is a detail-oriented school nutrition professional with extensive experience planning, supervising, and supporting large-scale school meal programs in compliance with the National School Lunch Act and USDA regulations.

Mindi has been the Buyer for Nutrition and Warehouse Service since 2019 at St. Vrain Schools. Prior to that the Director of Nutrition at Weld RE-8 in Lupton/Keenesburg, CO. She is currently serving as Coordinator of Operations for St. Vrain Valley School District, overseeing procurement, inventory systems, logistics, and vendor relationships for 53 school meal programs.

She brings a strong background in menu planning, commodity management, and team collaboration, with prior leadership experience as a Nutrition Services Supervisor and Food Service Director for multiple school districts. Mindi is known for strong organizational skills, effective problem-solving, and the ability to build long-term professional partnerships to support high-quality, cost-effective nutrition services.
